Leela Sassafras’ Smashed Egg and Avocado

Broghies fan Leela Sassafras has created a delicious Broghies breakfast recipe:

Ingredients:

1 egg

1/2 an avocado

1 Broghie

1/4 tsp Chilli flakes

Microgreens

Salt and Pepper

Method:

Boil the egg until its custardy yet firm. See link.

Allow egg to cool slightly. Peel and add to a bowl.

Peel and remove stone from the avocado, you’re only using half so cover and store the other half, scoop flesh into the bowl with the egg.

Take a fork and smash the egg and avocado and mix together gently. Add chilli flakes and season with salt and pepper.

Pop mixture onto the Broghie and top with a few microgreens.
